"Greens" such as Collards, Turnips, Mustard and "Creasy" greens are a great survival food. They are one of the most nutrient rich foods found in the world, packed with phytonutrients, vitamins and minerals. The only downside are they are not calorie dense at only around 50 calories per cup(cooked).

But they make up for the lack of calories with their easiness to plant, they grow rapidly, abundantly produce(especially with the little effort)and will continue to produce throughout the winter months. Besides, you can always just eat tons of them to get more calories, since their production is so high.

Planting is literally as easy at clearing the ground of other plants with a rake, spreading the seeds on the ground(literally just slinging them out by hand) raking back over them very slightly(1/8 to 1/4 inch of dirt covering them), lightly water if wanted(making sure not to flush the seeds away with too much water) and that is it. You could have young tender greens to eat in just a few weeks, depending on the amount of sun/rain they receive. You can make a patch as big or small as you choose. You can plant a 10X10 section in 5 minutes.

Also, Creasy greens grow wild and are very hardy plants, found throughout wide range and able to survive snows even in mountain areas. They are very easy to distinguish from other plants in the wild as well. Here is a picture of a small Creasy green plant (on left), they actually grow much larger.

Best recipe for collard greens

Thanks nsane... great post, greens are easy to grow and it doesn't have to be summer to grow tons of em...

This is how I cook greens, try it out, see what you think

2 good sized grocery bags of greens(mixed)
3 cans chicken broth
1 whole onion
1/2 red pepper (mostly for color)
1 tblspn minced garlic
1 tblspn black pepper
1 apple
2 tblspns honey
1/2 pack bacon
1 small can green chile's (4.5 oz)
A good dose of red pepper flakes
1/2 cup vinegar
1/4 cup red wine vinegar.

Remove stems from greens, cut leaves into pieces that are no bigger than about 2x2 inches.
In large pot combine chicken broth, chopped onion, red pepper flakes, finlely chopped red pepper, garlic, honey, chiles, vinegar.
Cut bacon into 1x1 inch pieces and add to broth.
Add greens to broth and pack em down. Cut apple into whole sections (about 4 or 5 pieces) and add to top of greens.
Cook for 3-4 hours on low heat, remove apples when finished, they will be soggy so dont worry if some pieces come off and stay in the pot, just get what you can.
My 4 year old son will eat greens cooked this way... enough said.
